Back Bistro brings casual-fine dining to the Palladio

Long-time Folsom business owners Jeff and Gail Back recently relocated Back Bistro to the Palladio and things are bigger and better than ever – literally.

What started as an 875-square-foot suite in a strip mall 10 years ago is now one of Folsom’s staples.

“We were looking for a more visible location for the last three years. We were looking at three different spots in the Palladio and finally landed on this one,” Jeff said. “This location is perfect for us.”

The local bistro had their soft opening in mid-April and their grand opening on May 10. Since, business has been booming.

With aspects of the previously location, Back Bistro is new and improved. New menu items, a cocktail program, large happy hour and a 30-person bar top are just a few new things to look forward to when dining at Back Bistro.

“We wanted to create more of a nice vibe, but not a stuffy vibe,” Jeff said. “We wanted it to be casual enough that you can come in here after a movie in shorts and a t-shirt for some good food. Our prices aren’t outrageous; there is no pretention – just a comfortable place.”

Jeff said they call Back Bistro causal-fine dining because you can come in a suit for a business dinner and have a 3-course dinner with a $200 bottle of wine or come with friends for happy hour and have a $5 glass of wine, a pizza and you’re done.

“We want to encompass everything,” Jeff said. “My favorite thing so far has been the vibe we created. I love walking in here and seeing exactly what my wife and I envisioned. We are still in a ‘Wow, this is our place?’ state-of-mind.”

Jeff said so far, the most popular item on the menu has been the Arancini which are crispy panko-breaded risotto spheres, basil pesto, mozzarella and red pepper rouille.

“People are really loving those risotto balls. Another huge hit has been the scallops. They are beautiful and have been consistent,” he said. “The filet mignon has also been well-received.”

Jeff said their happy hour is bigger and better with a $5 and $8 menu with different food and drink items, and nothing disappoints.

“Happy hour is every day now, from 4 p.m. to 6 p.m. as well as late nights on Fridays and Saturdays from 10 p.m. to 11 p.m.,” Jeff said.

One thing Jeff wanted long-time guests to know is that they brought their entire staff over with the core people still in place. He said they went from 15 employees to 50.

“We are a bistro with an amazing wine list verses a great wine bar with a small food list. It has been a great transition,” Jeff said.
